
Salama da sugo or Salamina - IGP
The most powerful symbol of Ferrara's food tradition
Salama da Sugo IGP, or Salamina da Sugo, is one of the most important products of Ferrara's cooking tradition. With its intense, spicy and elegant flavour, it represents a one of a kind culinary heritage, renowned nationally and protected by the IGP (Protected Geographical Indication).
It is a blend of different selected pork meats, red wine, salt, pepper, nutmeg, cinnamon, cloves and other spices that each artisan carefully cares for. The Salama is then stuffed in the pork's natural bladder, tied with twine in its typical "melon" shape and left to age up to a year.
The origins of this dish date back to the Renaissance: it was first mentioned in 1492 and later in a famous letter written by Lorenzo de' Medici, in which he thanks for the "precious and appreciated" gift.
Historical documents and cook books of the 16th century testify how this product was considered to be a refined specialty, worth of the finest tables.
