Acquadelle or Latterini are small fish with a slim, long body, a round belly and silver scales. They come from the Adriatic sea and the lagoons. The marinade of these small fish is an ancient tradition in the areas of Ferrara and Comacchio valleys.

With Acquadelle a marinated preserve is made, especially from October to mid December, when the fish is not fully developed yet and it is not in its food hoarding period. The Acquadelle are fried, marinated in vinegar and bay tree leaves and packaged in tins, allowing it to last up to 6 months.

It is possible to try Acquarelle during the many food events in the area, especially in Comacchio and Goro.
